Now this is more like it! So much more well integrated after a year in the bottle. I can taste the base beer and it's great, and the barrel adds so much. It softens the corners of the aggressive stout underneath without losing the bite. This is what I was expecting, one of the best I've ever tasted.

Hmm, it just tastes like postum now. Not in a bad way but it doesn't have the balance and depth of flavor as the regular.

Very much like the ROES, probably a bit thicker and richer...? I'd have to try side by side to be sure. Excellent, regardless.

Hey, this was actually good! The alcohol burn was way down (although it peeked out as it warmed) and the flavor was chocolate roast. I mean, it's still not as good as many readily available imperial stouts but I guess the sweet spot is ten years.

Big fruit taste, highly tannic, highly alcoholic. The fruit flavor is quite delicious but not balances with the beer aspect. More like a wine, as I saw a review mention. Don't go for this kind of stuff.

Yeah, this is great. Sweet and dry. Paired surprisingly well with a spicy chicken chili on a cold day. Haven't had one in a while. Not sticky sweet like straightjacket but the harsh bitterness when fresh has completely mellowed, or I'm just not tasting it due to palate or food pairing.

This ages pretty well. I feel like the acidic side has dropped slightly. Wish I had some more to experiment with but alas.

I don't remember much from the bottle I drank, aside from thinking it might be interesting if aged. There is some lacto acidity, I was hoping for a little more depth, for it to dry out and develop some funk. It's delicious, just not as wild as I thought it might be.
