2022-09-25
2yr aged. No current year vintage owned for comparison. Red hue, with small head formed during pour or swirl. Slight lattice against glass. Hop dominated nose until left for a few minutes to breathe, and then malt comes through. Malt smells young, but notes the fruitiness of aging are there. Carbonation still felt when drank. Hop dominates the taste.

Pours with red hue and clear enough to see through, medium head that lattices on the side of the glass. Smell and taste dominated by the hops. Very bitter initially, with a raw malt/grain taste during finish. Medium mouthfeel.

3yr cellar. Head present when poured and swirled. Reddish orange hue and liquid is relatively clear. The nose is balanced between hop and fruit. The taste is mostly hops, with some malt sweetness. Not getting much fruit.

1yr aged. Beer pours with similar head as fresh, but lattice sticks to side of glass more. Less clarity, can no longer see objects through the class. Darker orange hue. Hops still present while smelling, but less overpowering than when fresh with some sweetness coming through. Still very bitter, but the malt is more biscuity and no longer tastes raw.

4yr cellar. Minimal head, with orangish brown hue. Hop aroma is stronger on the nose than older vintages, and the fruitiness hasn't aged into a dark fruit. Reminds me more of grape/wine. Hop very present in the taste, but the malt sweetness seems balanced after my palate adjusted to the hops. Bittnerness comes through in the finish.

2yr aged. Orangeish hue is more dull, but clarity about the same as a year younger. Head is less tall when poured, and dissipates more quickly. Aroma is a mixture of hops and sweetness from the malt, but hops still dominate the taste. There is a light sweetness from the malt in the finish.

5yr cellar. Beer pours with no head, but is more clear than older vintages poured recently. I can see my fingers through the glass when I could not with older vintages. Nose is mostly aged malt fruity, but I'm not getting much hop. Taste is balanced between the fruit and the hops. During my last vertical tasting, I felt the 5yr vintage was less balanced than the 4yr. This may seem balanced compared to the older vintages I've tasted prior. Bitterness appears in the finish about 30sec after drinking.

3yr cellar. Orangish hue, clarity, and head about the same as a year younger. Head present when poured, dissipates quickly, but reemerges when swirled. Hops are no longer overwhelming the aroma - I'm now getting more sweetness and fruitiness. Still bitter from the hops on initial taste, but drinks like a more balanced beer. Hint of dried fruit in the finish.

6yr cellar. Opened a few weeks after the 2015 vintage cellared for 7yr. Visibly very similar - possibly with more carbonation. Very small bubbles appeared after swirling. Fruit jam and hop smell, similar mouthfeel with good body. Hop bitterness dominates the taste, but the paper/cardboard taste isn't present. Will look to see if that becomes more prominent beyond 7yr.

4yr cellar. Color remains consistent with earlier years, and small head still present when poured and swirled. This is probably the most balanced vintage yet (when drank from most fresh to most aged, still have a 5yr vintage remaining). Hops still present in aroma, but it's balanced in the taste with the slight sweetness from the aged malt. No alcohol burn, but slight we papery taste emerging.

7yr cellar. Beer pours with no head. Very minor lattice on glass when swirled. Reddish brown color. Fully opaque, but no particulate floating around. Fruit jam smell with some hoppy pine still present, which is surprising. More body, still oily, compared to the Old Stock at an earlier vintage. Hop bitterness dominates the taste, possibly some paper/cardboard. Very dry finish.

5yr cellar. Beer appears hazier, and pours with very little head. Aroma is now predominantly that aged fruit smell from the aged malt, but there's still a slight hop smell present. Hop and malt flavors exist in the beer, but are both extremely muted. I was expecting more of the aged malt taste to be present but overall there isn't much flavor other than what remains of the hops. This beer is still drinkable but I would consider it past prime.

4yr cellar. Beer is cloudy, with very little light able to shine through. Golden brown color with very little head present. Legs stick to glass briefly. Smells of dried fruits and strawberry candy. On the taste - there's more body and carbonation. Tastes similar to smell, and drops off fast. There's a bitter finish that wasn't present in older vintages included in this vertical tasting.

2yr cellar. Golden brown hue with moderate head when poured. Brown sugar aroma with lattice sticking to glass when swirled. Mild sweetness with carbonation felt when drank. Medium body. Overall impression is good, but not a lot of depth without more age on the malt.
Drank 12 oz of Old Stock ale 2017 by North Coast Brewing Co.May 22nd, 2022

5yr cellar. No head when poured, and beer is cloudy when poured. Not able to see much light through the glass. Color is extremely dark amber. No legs on glass. Smell is consistent with other vintages cellared at this age. Smells sweet, aged malt, aged dark fruits, strawberry candy. Light mouthfeel, but body lingers through the finish. On the taste - arrival is what is expected based on the smell, but drops off fast. There is a finish that returns with strawberry candy. This age is not as enjoyable as the 6yr 2016 I drank last month. Will be interesting to see if this becomes better.

3yr cellar. More clarity than the 2016, brighter hue, with a more noticeable head and carbonation level. Sweetness/caramel present in the nose, and the sweetness carries through in the taste. Lattice created when swirled, but doesn't stick to class. Lighter mouthfeel. Overall impression is that this is a good timeframe for cellar, but current preference is aged another year.

6yr cellar. No head when poured. Pretty clear visibility with a mahogany or deep red color. No legs on glass. Smells sweet like strawberry candy and grain. Flat mouthfeel with little carbonation on the back of the throat. Tastes sweet on the arrival - the strawberry candy comes through from the nose - and then drops off hard. Nothing mid palate or in finish.

4yr cellar. Beer appears cloudy when poured, but a small head present after pour and when swirled. Smells sweet, malt taste present but not raw tasting, notes of dried fruit and caramel. Body sticks to glass when swirled and medium/slick mouthfeel. Overall impression is this is a good timeframe for cellar.

5yr aged. No change in clarity and good head still present. Less fruitiness in both the nose and in flavor, which is predominantly now a blend of toasted and aged malts. This is still an excellent vintage but I prefer the 4yr aged with the additional fruity notes.

4yr aged. Opacity appears unchanged, and strong head still present. Light lacing on the side of the glass when drank. Smells more of fruit and a syrupy sweetness that is slightly medicinal but not unpleasant. Tastes of plum and dried fruit without much of the spice or bitterness remaining. Very good vintage, interested in the 5yr next.
